Ingredients
- ½ cucumber
- 1 yellow bell pepper
- 2 celery stems, with leaves
- 1 clove of garlic
- 1 avocado
- 1 handful flat-leaved parsley
- 1 handful coriander
- 1 tbsp apple cider vinegar
- 1 tbsp extra virgin olive oil
- Salt and pepper (to taste)
- Fresh herbs (as garnish)
- Spoonful of yoghurt (as garnish)
- Chilli flakes (as garnish)
Preparation
- Remove the heart of the bell pepper together with the stem and seeds.
- Put the bell pepper and all the other ingredients (except the garnishes) in the blender.
- Blend until smooth, then taste and season if necessary.
- Top with fresh herbs, chilli flakes, and yoghurt.
