Waffles with apples and cinnamon

Ingredients

  • 125 g flour
  • 1 tbsp brown sugar
  • ½ tbsp baking powder
  • Pinch of cinnamon
  • Pinch of salt
  • 2 eggs (split)
  • 125 ml milk
  • 125 ml low-fat yogurt
  • 2 tbsp melted butter
  • ½ tsp vanilla extract
  • ½ tbsp fresh lemon juice
  • 1 apple

Preparation

  1. Mix together the brown sugar, baking powder, cinnamon, salt and flour.
  2. In a separate bowl, beat the egg yolks with the milk, yogurt, melted butter and vanilla extract.
  3. Add the flour mixture while stirring and mix until a smooth batter is formed.
  4. Pour the lemon juice in a small bowl and grate the apples into it.
  5. Stir together and add to the batter.
  6. In a separate bowl, whisk the egg whites until stiff and carefully fold into the batter.
  7. Bake the waffles in a waffle iron for around 2 minutes.
